Fantastic Family Gathering Brunch Recipes

For the first time in a year and a half, Rete & I were finally able to visit our kids and the rest of our families.  Thanks to our daughter, Jodi, we had a wonderful day with almost our entire family, hugging, talking and eating.  It felt so good to just “be” with everyone after the long year just past.

These kinds of parties are great because everyone brings and shares a special dish.  So, we wanted to share some of the most delicious and easiest recipes.

First up: Quick & Easy Brie & Bacon Quiche

Ingredients

1  purchased pie shell, pre-baked as per instructions
4 oz. Brie cheese, rind removed & diced

4 oz. Swiss cheese, diced
8-10 slices bacon, cooked & crumbled
6 whole eggs
1/2 c. heavy whipping cream
1/2 c. Greek yogurt
1 tso, Worcestershire sauce
1 tsp. salt & pepper
Optional :  Asparagus spears for garnish

Instructions

1. Preheat oven to 375 F
2, Add the diced cheeses to the  Pre-baked and cooled pie crust

3.Mix all other ingredients together & pour on top of cheese
4. Add asparagus spears, if desired,  10 minutes before done
5.Bake 40-50 minutes until a knife inserted in center, comes out clean
6. Cool slightly before cutting & serving.

Elaine's Mexican Casserole

Ingredients:
12 Eggs
1 16oz jar Salsa (medium)
1 Pkg. Breakfast Sausage (the kind in the tube)
1 bell Pepper, chopped
1 onion, chopped
2 c. Cheese (I use Mexican blend)

Spread jar of Salsa on bottom of 9×13 pan.  Cook Sausage, pepper, & onion and spread over Salsa.  Whip the eggs (add Salt & Pepper to taste) and pour over the sausage mixture.  Top with the cheese.  Bake at 350 degrees for 45 minutes.

Sarah's Lemon Curd Pastry

Ingredients:
1 sheet Frozen puff Pastry
1 8 oz pkg. Cream Cheese
Confectioners sugar to sweeten cream cheese & to make glaze
1/2 tsp. Vanilla Extract
Lemon Zest (1 lemon) for filling & glaze
Lemon Curd (recipe to follow)
1 Egg for egg wash to brush pastry before baking
2 Tbsp. Milk for glaze

Lemon Curd:
6 egg yokes
1 c. sugar
1/2 C. fresh squeezed lemon juice (approximately 4-5 lemons – no bottled juice)
1/4 C. butter, unsalted, room temperature
1 Tbsp. lemon  zest

  1. In a small saucepan, combine eggs, sugar, & lemon juice.  Whisk together and cook, stirring constantly, until curd begins to thicken.  It  should not boil.  Approximately 10-15 min.
  2. Once it’s thick enough to coat the back of a spoon, drag your finger thru it & if it doesn’t run, remove from heat & pour thru a strainer.
  3. Cut butter into small pieces & add to the curd, stirring until combined.  Add lemon zest
  4. Cool curd and place on top of cream cheese layer on pastry, as above

Instructions Pastry Assembly:

Preheat oven to  400 F 

  1.  Make Filling:     Mix Cream Cheese, confectioner sugar, vanilla Extract & lemon zest until thoroughly combined.
  2. Fill Pastry:   Cut 1″ strips down the L. & R 1/3s of pastry sheet, leaving center 1/3 untouched.  Add Cream cheese mixture to the center, then lemon curd over it.
    Fold alternate strips over one another from Left & then Right, creating a braided effect.  
  3. Make egg wash with by mixing beaten egg & water & brush over entire pastry.
  4. Bake at 400 for 20 min.
  5. Glaze with confectioners sugar +milk+vanilla+ lemon zest.  Mix in bowl.
  6. Once pastry is  cooled to room temp., drizzle glaze over

All of these dishes were scrumptious and well worth the time to make.
